So for dinner tonight I decided a nice smooth gazpacho would be good with and avocado relish. There is nothing better then a chilled soup on a hot day and even though it is only May it is already pretty hot here. plus i really love the taste of fresh spring vegetables melded together.
Gazpacho
7 ripe hot house tomatoes
1 clove garlic
1/2 cucumber chopped
1/2 red onion chopped
1/2 green pepper chopped
1/2 olive oil
1-2 Tbs pomegranate red wine vinegar
1 tsp curry powder
1 tsp salt
1 tsp Creole seasoning
Blend 3 tomatoes, cucumber, onion, garlic, and green pepper. Then strain liquid in to bowl and discard solids. next blend remaining tomatoes, oil, vinegar, and spices and add to liquid. Chill for a few hours or overnight before serving.
Avocado Relish
2 avocados mashed
2 Tbs medium salsa
1/2 diced cucumber
1 tsp lime juice
mix all ingredients together. Chill until ready to serve soup. Top each bowl with a generous spoonful of relish
