
OK my first attempt at a tofu veggie patty was not a success. They were bland and and to loose. They were loaded with veggies and not inedible so not a total failure. On the bright side my mashed sweet potatoes topped with feta, dried cherries, and walnuts were a big hit with the family. I forgot how much i loved sweet potatoes but woke up with a craving for sweet potato casserole this morning. You know the one with the mashed potatoes topped with pecans, brown sugar, and butter crust. The ooey gooey sweet concoction that goes straight to the thighs. Well i have to say this was a lot healthier and really satisfied my craving.
3 large sweet potatoes peeled and chopped
2 Tbs Butter
1/4 cup skim milk
6 Tbs reduced fat feta crumbled
6 Tbs dried cherries
6 Tbs chopped walnuts or pecans
Boil chopped potatoes until soft and fork tender. Drain potatoes and combine with butter and milk. Whip with hand mixer until smooth. Divide potatoes among 6 servings and top each one with Tbs of each feta, cherries, and nuts.
